Dinner tonight I made a big pot of vegetable tortellini soup.
2 scoops of our favorite bone broth powder (optional)
4 cups of water
2 small cans of low or no sodium vegetable juice
2 cups of unsalted Vegetable Stock
1 cup low sodium Chicken stock (optional)
1 table spoon of Olive oil
2 cups of each Corn and Green Beans fresh or frozen
1 bag of your favorite dried pasta or in this case Tortellini
1-2 fresh minced garlic
I added 1 table spoon of chives, pepper to taste, salt to taste (I used pink Himalayan salt) 1/2 teaspoon of poultry seasoning, 1/4 teaspoon of dried ground ginger
Sometimes I've made this with cooked Chicken or even a Meat alternative.
I just boiled the water, stocks, vegetable juice, seasoning, vegetables and Bone Broth powder and then added pasta until desired doneness and serve, great with warm fresh crusty bread as well.
D-man had chicken in his bowl, I wasn't feeling like chicken tonight, but I really love how all these flavors come together for this hearty soup. #soup #bonebroth #foodie #whatsfordinner
