Meatless Monday Ideas #1

We're not vegan or even vegetarian, though I myself do try to eat more on the vegetarian side. I'll be honest it can be tough, hubby's Italian and I'm Italian and Hawaiian, so as you can imagine it can be really tough to get the hubby to eat this way. So if I am going to make a meatless dish, I have to be sneaky about it and it had better be hardy! lol Here are a few Ideas I've recently found.
