Sunday's Dinner: Turkey Chili Mac



By now you’re probably ready to pass out from all the food, shopping and traveling craziness that this season brings. Hopefully, you’ve made some amazing memories and shared traditions, with all the craziness of the past week, what’s for dinner or what do I make now with that leftover Turkey? is probably something that has crossed your mind a time or two.

I actually enjoy the leftover Turkey, it allows me to be creative as you can see from my ideas from the post:  Got Leftovers From Tonights Holiday Dinner?? Well, I have some Ideas For You!




One of the meals I like to make when I have leftover Turkey or just want an easy, yet hearty quick meal is my version of Turkey Chili as it can be made with shredded leftover Thanksgiving Turkey, chunked Turkey Tenderloin or as how I made this with ground Turkey. Now I am a Jennie-O Switch Circle Blogger so on this night I used Jennie-O Lean All Natural Turkey.


























Feel free to alter it to your own tastes or needs, but for this version, you’ll need the following:

1 lb. of pre-cooked ground Turkey (or shredded or chunked Turkey)
1/2 small red onion (you can sub for your favorite onion or omit), diced, chopped or grated
1 tablespoon of garlic
1 pound of pre-cooked macaroni or favorite pasta (a lot of boxed dry pasta is around 1 lb. and I use about 3/4-1 full box of it)
1 – 15 oz. can of kidney beans rinsed and drained
1 – 15 oz. can of black beans rinsed and drained
2 - 14.5 oz. cans of fire roasted tomatoes
1, 8-12 oz. bag of frozen corn
3 cups of Vegetable, Turkey or Chicken stock
1 ½ cups of water

Season to taste, I used fresh cracked pepper, pinch of salt, smoked paprika and a pinch of chipotle seasoning, but season as you like and to your tastes.


Optional toppers:

Sliced Avocado
Shredded Cheese
Sour Cream
Tortilla Chips
Sliced Green Onions
Sliced Pepperoncini or Jalapeno peppers

Since this calls for pre-pasta and pre-cooked meat you can just add to your large covered pot, I used a covered 5qt pot for mine, but feel free to adjust as needed if you decrease or increase the recipe.
Honestly, since the meat and pasta are pre-cooked, this is a bit of a dump, heat through and stir as needed kind of recipe. I cooked mine over Medium heat, but cooktops can vary a bit, so adjust as needed, but once it is simmering for 15 mins you should be good to go. If you like this more of a soup, vs a chili, just add water and stock until desired consistency and it’s great with a bit of lightly toasted bread or garlic bread as well.

Grandma, OREO Cookies and Memories......





If you read my previous post on OREO Walmart and Ibotta:  Thanks to OREO and Walmart I'll Be Stocking Up and Saving!





Then you know that not only OREO holds special meaning but this time of year in general as well and not because of my birthday! During the Holidays Grandma, always had OREO Cookies and as kids, We left OREO cookies and Milk out for Santa! OREO evokes memories of my Grandma, traditions my Grandma instilled in us like watching holiday movies as a family, decorating for the holidays as a family with heirloom ornaments as well as decorations us grandkids made each year, to the food, desserts like pies and even Grandma's butterscotch pudding topped with OREO crumbles.




For me at least these traditions remain, I still love the lights, decorations, the smells, the foods, the movies and yes, the OREO cookies and with OREO Cookies seasonal flavors I am reminded of those moments with Grandma. Ways To Save This Cyber Monday and Year-Round on Groceries, Gifts and More!


With all the chaos of Black Friday, it’s tough to remember to shop around for the best prices on everything, however, there are some great Apps that allow you to save after you’ve shopped and a great site I've been using since 2008 that helps you save when you shop online.

Even when I shop around, I always check these Apps before I head out to the stores or this site if I’m shopping online to save even more!

Got Leftovers From Tonights Holiday Dinner?? Well, I have some Ideas For You!

Leftover Turkey makes for some great as well as quick after the holiday meals! Some of my favorite ways to use leftover Turkey is; Turkey Chili, Turkey Noodle Soup, Turkey Soft Tacos, Turkey Enchiladas, Turkey Noodle Casserole, and even Turkey Hoisin Stir Fry to name a few.


A great thing about Turkey Chili is that you can put it into your slow cooker and let it do its thing. So, it can cook while you're relaxing, watching football, shopping and in a few hours a hot tasty meal will be ready for you and if you want to make it even more hearty, just add some cooked Marconi as it makes for a perfect winter meal!



For Turkey Taco's, be it soft or hard shell, just warm up the already cooked leftover Turkey meat with your usual Taco seasonings, add your favorite Taco fixings, maybe even a side like Spanish rice and your go to go!



For something a little different, try a container of premade Mole sauce, just follow the directions on the container to make Mole Enchiladas, and use your leftover pre-cooked Turkey as the filling.



Do you have a favorite Quiche recipe? just use your leftover pre-cooked Turkey as part of the filling!



Another idea for Turkey as well as a few other leftovers is; take a can of Crescent rolls, lay them on a cookie sheet separate the triangles, take a little leftover Turkey, a bit of Corn or other vegetables, a bit of Gravy and a bit of Potatoes or Turkey, Cheese, Cranberry sauce and BBQ sauce or Turkey and Hoisin sauce in the middle of half of the triangles which I think most cans contain 8, if it's different just uses half as bottoms and the remaining as tops. Then top the bottom triangle that has a bit of filling on it with another of the triangles, pinch the edges together or crimp with a fork, place a small slit in the top and bake as you normally would bake the crescent rolls if you were making crescent rolls since the meat and filling have already been cooked before, just keep a watch on them during the last few mins as you may need to adjust time up or down depending on your oven. You looking for about the same color as you would when you cook crescent rolls, remove them from the oven, let then cool for about 5 mins, be careful as the filling may still be hot and enjoy!



Have leftover Corn? you can add it to a homemade soup, add it to a canned soup, make homemade Cream Style Corn or even Corn Bread!



Have leftover Potatoes, use them to top a Turkey version of Shepherd's Pie and you can also use leftover Gravy as part of your sauce too!



Sorry the only idea I have for leftover Stuffing is Stuffing Muffins for another meal



Have some other leftover sides? Try blending up or smashing those leftover Sweet Potatoes and adding them to an egg and make Sweet Potato pancakes or even mix them into your favorite Pancake batter, or add some to Pumpkin Muffins for an added layer of flavor and they can be a tasty addition to a Protein Shake or even add a little Cream or Half and Half until the desired consistency for a tasty Pasta sauce!



Have leftover Grits? Think Grit Cakes!



Leftover Greens? I like to make sure they are well drained and add them to some Scrambled Eggs in the morning, yum or sauté them up with a little Garlic and a bit of Olive Oil for a side dish for a different meal!



Have leftover pie?? What were you thinking?? Why is there leftover pie?!!! lol... Pumpkin, Apple, Cherry, Peach, Sweet Potato, Pecan Pie can make for a tasty addition to your morning smoothie if you add just a little if you’re not minding calories than they make a great addition to a bit of frozen yogurt or Vanilla Ice Cream.
