As most of you know I am a Jennie-O Switch Blogger, I love their products and have been using them for years! I love Jennie-O’s variety of products offered as well as the quality, for us they never disappoint and many are so versatile!
Thursday’s dinner features:
Jennie-O Extra Lean Boneless Turkey Breast Tenderloins
I made Turkey Cutlets and served them over Angel Hair and Marinara, Yum!! The cutlets were tender, juicy and married perfectly with the Angel Hair and Marinara!

Sorry I am not the best at writing out recipes, but here is how I did this: Now everyone’s oven may vary but I know ours pretty well. I pre-heated our oven to 375 degrees
I used a cookie sheet that I lined with a pre-cut Parchment Baking Sheet which I lightly oiled with Olive Oil, but I’ve also used Coconut Oil and Avocado Oil as well.
I tend to make my own Marinara, but I also use a few brands of pre-made and if you don’t like Marinara this is also great with Alfredo or Sun Dried Tomato Alfredo sauce and you can use your favorite sauce as well.
As for Pasta I used Angel Hair from my favorite brand, but I have also used Tortellini, Penne and Fusilli as well, so use what you have.
Now this is how I make always make my cutlets, Chicken or Turkey, for my version I used:
1 lg egg or extra-large egg with a splash of milk or water in it as well as 1 teaspoon of Spicy Brown Mustard, lightly beaten and mixed together.
I used about a cup of Italian bread crumbs, though I still season with freshly grated parmesan and Asiago cheeses, ¼ teaspoon dried Italian herbs, a pinch of salt, ¼ teaspoon of California Style Garlic Powder, 1 teaspoon of flour and then mix it all together.
I lightly pounded the tenderloins to make them all about the same thickness, so they would cook up at the same time.
I than dipped the tenderloins in the egg wash, then the bread crumb mixture than placed them on my prepared cookie sheet. Once I did the same with all of the pieces it was into the oven they went for 20-25 mins, I turned them over half way and once the time was up I check them with the meat thermometer and they were perfect! While the Cutlets were cooking I cooked my pasta and I had already been cooking my sauce
