Tonight's Jennie-O Turkey Stir Fry

Jennie-O Turkey Stir Fry:

1 Teaspoon of Coconut Oil, Avocado Oil or even Olive Oil to help brown the Turkey

1 Lb  Jennie-O Extra Lean Ground Turkey Breast





1 Lb Asparagus

1/2 Sweet potato (mine was larger sized so I only used half and put the other half in the fridge for another meal)

1/2 Teaspoon of Minced or Chopped Garlic (I used this as well as a few sprinkles of a granulated Garlic Powder)

1/4 Teaspoon of fresh ground Pepper

1/2 Teaspoon of Minced Ginger or Powdered Ginger

1 Teaspoon of Dried of Fresh Chives or even Scallions

1/4 Cup of Low or No Sodium Vegetable, Chicken Stock or Bone Broth

2 Tablespoons of Hoisin Sauce (I used Hoisin) or Teriyaki or even Oyster Sauce

1/4 Cup of Diced or Crushed Pineapple (I used Fresh, but canned would work too, for less sugar look for one in own Juice and not Syrup)

While my Jennie-O Extra Lean Ground Turkey Breast was browning, I washed and prepared our Vegetables, Garlic

Once the Turkey was nearly browned I added the minced Garlic as well as the Ginger

I then deglazed the pan with the ¼ Cup of Vegetable stock

Next, I added the Asparagus (If your Sweet Potato is in chunks I would also add now, but ours was thinly sliced, so I waited), let it cook for about 5 mins over Med-High heat.

After 5 mins I then added the Sweet Potato, the Chives as well as the rest of the seasonings and continued to cook for another 5 minutes as I wanted our Vegetables to still be a bit crunchy.

*Now this may vary a little depending on your stove, so once the Turkey is browned I would cook the Vegetables to desired doneness, then enjoy!

I used Organic Vegetables, Stock as well as Coconut Oil, but use what you have, use what you like!










I Served ours over Jasmine Rice, however, to make it even more healthy Brown Rice, Red Rice, Quinoa, Salad would be yummy as well. Plus, the addition of Carrots or other Vegetables would be great too and Stir Fry’s are a great way to clean out the Vegetable bin in your Refrigerator!








Stir Fry’s are also a great way to eat healthy as you can totally control what goes in it, plus they are quick and easy to make, plus are great year-round.

Starting The Year Off Right With Jennie-O



Hi Everyone! Thank you for stopping by and for your continued support. Hope 2017 is starting off great for you all.


As you all know I’m a Jennie-0 Switch Circle Blogger and throughout the year I’ll be sharing many great recipes featuring products. I’ve been a Jennie-O consumer long before I became a Jennie-O Switch Circle Blogger and we continue to enjoy their quality products year after year.


Below is my latest dish, now it was supposed to be a Lettuce Wrap Meal, however, the Commissary was out of so much because of weather many trucks haven’t made their deliveries so I got literally the last bag of pre-cut organic salad mix! Anyway, the meal was quite tasty, as well as filling and I hope you enjoy!



This Recipe features:
Jennie-O Extra Lean Ground Turkey Breast:





Ingredients:
1 teaspoon of Coconut Oil or Olive Oil to brown the Ground Turkey in
1 lb. Package of Jennie-O Extra Lean Ground Turkey Breast
1/2 – 1 lb. of fresh Asparagus, washed, trimmed and cut or snap into bite sizes
1 large cleaned Portabella Mushroom, trimmed and sliced
5 oz. can of sliced Bamboo Shoots, drained
1/4 cup of vegetable stock
1/4 cup of your favorite Hoisin Sauce
Pinch of Salt and Pepper
1 teaspoon of chopped or minced Garlic or about 2 cloves chopped or sliced


Now as you read above I had to use Pre-Cut Salad mix, but you could easily make Lettuce Wraps out of this or it would be tasty over Steamed Rice or Brown Rice, as well.
First, you want to heat your oil over med-low or med heat depending on your range, then add the Ground Turkey, cook until cooked through and lightly browned.


I prepped my Garlic, Asparagus as well as my Portabella Mushroom while my Jennie-O Extra Lean Ground Turkey Breast was browning.


Once the Turkey is cooked and browned, then add your Garlic, Asparagus, Mushroom as well as Bamboo Shoots.


I let the Turkey, Garlic, and Vegetables cook over medium heat for 5 mins. At this point I added the Vegetable Stock and Spices (Just not the Hoisin Sauce) I continued cooking for 7 minutes and then I added the Hoisin, I then covered the pan and continued to cook for 2 more minutes. Depending on how cooked you like your vegetables or how fast your food cooks up depending on your range it should be ready to serve, if not continue to cook your vegetables until desired doneness.




Like I mentioned and as shown in the pictured I served ours over pre-cut salad mix, but would be great as tasty, healthy, filling meal as a lettuce wrap, over Brown Rice, or even Low Fat or Low Carb Wrap or if you don’t mind the Carbs or Calories Steamed Rice.

Sunday's Dinner: Turkey Chili Mac



By now you’re probably ready to pass out from all the food, shopping and traveling craziness that this season brings. Hopefully, you’ve made some amazing memories and shared traditions, with all the craziness of the past week, what’s for dinner or what do I make now with that leftover Turkey? is probably something that has crossed your mind a time or two.

I actually enjoy the leftover Turkey, it allows me to be creative as you can see from my ideas from the post:  Got Leftovers From Tonights Holiday Dinner?? Well, I have some Ideas For You!




One of the meals I like to make when I have leftover Turkey or just want an easy, yet hearty quick meal is my version of Turkey Chili as it can be made with shredded leftover Thanksgiving Turkey, chunked Turkey Tenderloin or as how I made this with ground Turkey. Now I am a Jennie-O Switch Circle Blogger so on this night I used Jennie-O Lean All Natural Turkey.


























Feel free to alter it to your own tastes or needs, but for this version, you’ll need the following:

1 lb. of pre-cooked ground Turkey (or shredded or chunked Turkey)
1/2 small red onion (you can sub for your favorite onion or omit), diced, chopped or grated
1 tablespoon of garlic
1 pound of pre-cooked macaroni or favorite pasta (a lot of boxed dry pasta is around 1 lb. and I use about 3/4-1 full box of it)
1 – 15 oz. can of kidney beans rinsed and drained
1 – 15 oz. can of black beans rinsed and drained
2 - 14.5 oz. cans of fire roasted tomatoes
1, 8-12 oz. bag of frozen corn
3 cups of Vegetable, Turkey or Chicken stock
1 ½ cups of water

Season to taste, I used fresh cracked pepper, pinch of salt, smoked paprika and a pinch of chipotle seasoning, but season as you like and to your tastes.


Optional toppers:

Sliced Avocado
Shredded Cheese
Sour Cream
Tortilla Chips
Sliced Green Onions
Sliced Pepperoncini or Jalapeno peppers

Since this calls for pre-pasta and pre-cooked meat you can just add to your large covered pot, I used a covered 5qt pot for mine, but feel free to adjust as needed if you decrease or increase the recipe.
Honestly, since the meat and pasta are pre-cooked, this is a bit of a dump, heat through and stir as needed kind of recipe. I cooked mine over Medium heat, but cooktops can vary a bit, so adjust as needed, but once it is simmering for 15 mins you should be good to go. If you like this more of a soup, vs a chili, just add water and stock until desired consistency and it’s great with a bit of lightly toasted bread or garlic bread as well.

Got Leftovers From Tonights Holiday Dinner?? Well, I have some Ideas For You!

Leftover Turkey makes for some great as well as quick after the holiday meals! Some of my favorite ways to use leftover Turkey is; Turkey Chili, Turkey Noodle Soup, Turkey Soft Tacos, Turkey Enchiladas, Turkey Noodle Casserole, and even Turkey Hoisin Stir Fry to name a few.


A great thing about Turkey Chili is that you can put it into your slow cooker and let it do its thing. So, it can cook while you're relaxing, watching football, shopping and in a few hours a hot tasty meal will be ready for you and if you want to make it even more hearty, just add some cooked Marconi as it makes for a perfect winter meal!



For Turkey Taco's, be it soft or hard shell, just warm up the already cooked leftover Turkey meat with your usual Taco seasonings, add your favorite Taco fixings, maybe even a side like Spanish rice and your go to go!



For something a little different, try a container of premade Mole sauce, just follow the directions on the container to make Mole Enchiladas, and use your leftover pre-cooked Turkey as the filling.



Do you have a favorite Quiche recipe? just use your leftover pre-cooked Turkey as part of the filling!



Another idea for Turkey as well as a few other leftovers is; take a can of Crescent rolls, lay them on a cookie sheet separate the triangles, take a little leftover Turkey, a bit of Corn or other vegetables, a bit of Gravy and a bit of Potatoes or Turkey, Cheese, Cranberry sauce and BBQ sauce or Turkey and Hoisin sauce in the middle of half of the triangles which I think most cans contain 8, if it's different just uses half as bottoms and the remaining as tops. Then top the bottom triangle that has a bit of filling on it with another of the triangles, pinch the edges together or crimp with a fork, place a small slit in the top and bake as you normally would bake the crescent rolls if you were making crescent rolls since the meat and filling have already been cooked before, just keep a watch on them during the last few mins as you may need to adjust time up or down depending on your oven. You looking for about the same color as you would when you cook crescent rolls, remove them from the oven, let then cool for about 5 mins, be careful as the filling may still be hot and enjoy!



Have leftover Corn? you can add it to a homemade soup, add it to a canned soup, make homemade Cream Style Corn or even Corn Bread!



Have leftover Potatoes, use them to top a Turkey version of Shepherd's Pie and you can also use leftover Gravy as part of your sauce too!



Sorry the only idea I have for leftover Stuffing is Stuffing Muffins for another meal



Have some other leftover sides? Try blending up or smashing those leftover Sweet Potatoes and adding them to an egg and make Sweet Potato pancakes or even mix them into your favorite Pancake batter, or add some to Pumpkin Muffins for an added layer of flavor and they can be a tasty addition to a Protein Shake or even add a little Cream or Half and Half until the desired consistency for a tasty Pasta sauce!



Have leftover Grits? Think Grit Cakes!



Leftover Greens? I like to make sure they are well drained and add them to some Scrambled Eggs in the morning, yum or sauté them up with a little Garlic and a bit of Olive Oil for a side dish for a different meal!



Have leftover pie?? What were you thinking?? Why is there leftover pie?!!! lol... Pumpkin, Apple, Cherry, Peach, Sweet Potato, Pecan Pie can make for a tasty addition to your morning smoothie if you add just a little if you’re not minding calories than they make a great addition to a bit of frozen yogurt or Vanilla Ice Cream.

Last Night's Dinner


Last Night's Dinner

I’ll be honest, last night I wasn’t too sure what I was making for dinner, as I’ve had a hankering for Polynesian food and meatloaf sounded good as well! Lol So what did I do?? Did I pull out my Hawaiian Cookbooks? or scour Pinterest for great Polynesian dishes? Or did we get take out from the closest L & L? Nope, nope and nope! Lol I think I may have slightly lost my mind (if you find it could you send it home?) I sort of combined both, though once it was all cooked I was totally worried I made a mistake, because as I was cutting into it, things just didn’t have the same feel, so I though ohhhhhh noooo I ruined it! Nope, it turned out damn good I must say! We’re talking perfect outer crust, moist, tender, flavorful meatloaf with a bit of a Polynesian BBQ spin on it. I couldn’t wait to have leftovers today and I’m not much for leftovers!

Ok, here it goes, now this is what I used, but I am sure you could easily tweak it to your tastes:

While I pre-heated the oven to 350 as I combined the following ingredients.

2 lbs. of Ground Turkey, I used Jennie-O, since it is our favorite brand.
2 Lg Eggs lightly beaten
1/4 - 1/3 Cup of Italian Bread Crumbs
1 Tablespoon of Hoisin Sauce
1/4 Cup of Milk
1 8oz Can of lightly drained Crushed Pineapple
1/2 Teaspoon of fresh grated Ginger or a 1/4 Teaspoon of Powdered Ginger
1/4 Teaspoon of Granulated Garlic or Garlic Powder (Not Garlic Salt)
1/2 Teaspoon of Dried Italian Herbs
1/4 Teaspoon of Pepper
1/2 Teaspoon of Smoked Paprika

In a large bowl, I combine all my wet ingredients as well as seasonings until well blended, then I add in the bread crumbs, mix until combined and then I add the ground Turkey.

Once nicely combined, I add it to my Meatloaf pan, I than top the Meatloaf with the Topping sauce (Recipe below) and put it into my Pre-Heated 350-degree oven, set the timer for 1 hour 10 mins depending on your oven as ovens may vary, I check it at 1 hour and once it’s reached an internal temp of 160 F I pull it out of the oven and let it rest for about 5-7 mins.

Topping sauce:
3 Tablespoons of Hoisin Sauce
1 Tablespoon of Honey
1 Teaspoon of Ketchup
Mix to combine and top the Meatloaf prior to putting it in the oven.

Dinner tonight: Turkey Cutlets with Marinara and Angel Hair, Featuring Jennie-O Turkey Extra Lean Bonless, Turkey Tenderloins

As most of you know I am a Jennie-O Switch Blogger, I love their products and have been using them for years!  I love Jennie-O’s variety of products offered as well as the quality, for us they never disappoint and many are so versatile!  

Thursday’s dinner features:

 Jennie-O Extra Lean Boneless Turkey Breast Tenderloins  







I made Turkey Cutlets and served them over Angel Hair and Marinara, Yum!!  The cutlets were tender, juicy and married perfectly with the Angel Hair and Marinara!



Sorry I am not the best at writing out recipes, but here is how I did this:  Now everyone’s oven may vary but I know ours pretty well.  I pre-heated our oven to 375 degrees

I used a cookie sheet that I lined with a pre-cut Parchment Baking Sheet which I lightly oiled with Olive Oil, but I’ve also used Coconut Oil and Avocado Oil as well. 

I tend to make my own Marinara, but I also use a few brands of pre-made and if you don’t like Marinara this is also great with Alfredo or Sun Dried Tomato Alfredo sauce and you can use your favorite sauce as well. 

As for Pasta I used Angel Hair from my favorite brand, but I have also used Tortellini, Penne and Fusilli as well, so use what you have.

Now this is how I make always make my cutlets, Chicken or Turkey, for my version I used:

1 lg egg or extra-large egg with a splash of milk or water in it as well as 1 teaspoon of Spicy Brown Mustard, lightly beaten and mixed together.

I used about a cup of Italian bread crumbs, though I still season with freshly grated parmesan and Asiago cheeses, ¼ teaspoon dried Italian herbs, a pinch of salt, ¼ teaspoon of California Style Garlic Powder, 1 teaspoon of flour and then mix it all together.

I lightly pounded the tenderloins to make them all about the same thickness, so they would cook up at the same time. 






I than dipped the tenderloins in the egg wash, then the bread crumb mixture than placed them on my prepared cookie sheet.  Once I did the same with all of the pieces it was into the oven they went for 20-25 mins, I turned them over half way and once the time was up I check them with the meat thermometer and they were perfect!  While the Cutlets were cooking I cooked my pasta and I had already been cooking my sauce 



Some other ways I like to use the Jennie-O ; Jennie-O Extra Lean Boneless Turkey Breast Tenderloins  is after roasting it, slice the cutlets ups and serve over a slice of warm bread with a little gravy for open faced Turkey sandwiches or even Turkey Fajitas, Turkey Enchiladas, Turkey Scaloppini, Turkey Tetrazzini as these tenderloins are very versatile!

Tonight's Dinner with Jennie-O

Hi everyone,

As most of you know I am a Jennie-O Switch Blogger, I love their products and have been using them for years, long before I was a Jennie-O Switch Blogger.  Honestly, we have some form of Jennie-O product at least 4 times a week!  So I thought I would share what I received in my Switch Box today as well as tonight’s dinner which features one of the products from the box.

One of the things I love about Jennie-O is the variety of products offered as well as the quality, for us they never disappoint.  

My Switch Box contained:

Jennie-O Lean Ground Turkey   and   Jennie-O Extra Lean Boneless Turkey Breast Tenderloins 






For tonight’s dinner I'm making Turkey Meatloaf featuring both Jennie-O ground Turkey as well as Jennie-O Turkey Bacon.


Our dinner tonight was a slightly modified version of Jennie-O's Best Ever Turkey Meatloaf: Jennie-O Best Ever Turkey Meatloaf


Here are the modifications I made to an already tasty meal:  

1)  I added a 1/4 cup of dried spinach

2)  For the Onion I used a Red Onion and grated it directly into the meat

3) I  cut up and added 4 slices of Jennie-O Turkey Bacon that I pre-cooked a bit






I served our dinner with Garlic Mashed Red Skinned Potatoes and Sautéed Zucchini
