Italian Inspired Soup Featuring Jennie-O All Natural Turkey Sausage

Thanks for stopping by today,  I have another recipe to share with you featuring  Jennie-O All Natural Turkey Sausage


which is:

GLUTEN FREE

ALL NATURAL LEAN,

ONLY 5 GRAMS OF FAT PER PER SERVING



Now I know a lot of people think breakfast when they think of ground sausage, but honestly, ground sausage is pretty versatile!  

Ground sausage can honestly be added anywhere you'd add meat; breakfast, lunch and even dinner.  

From egg scrambles to salads, soups, sandwiches, pizza and even pasta dishes like lasagna for example!

So since here in our part of the Pacific Northwest, the weather has still been a bit chilly, I thought why now make a hearty soup?  That's just what I did, it's an Italian inspired, hearty soup with lots of flavor. 





For this recipe I used the following:


1 small can of Low Sodium Vegetable Juice (mine was a 5.5oz can)

2 Cans Fire Roasted Diced or Whole Tomatoes (mine were15.5oz)

4 Cups of stock of choice (I used Vegetable, Low Sodium)

1 Can of Cannellini Beans (mine was a 15.5oz can and I believe No or Low Sodium)

1  12oz Box of Pasta of Choice (I used Tri-Color Rotini)

Season to taste: I added a pinch of fresh cracked Pepper, 1/4 tsp. of dried Italian herbs, 1/4 tsp. of chopped Garlic, as well as a 1/4tsp. of dried Chives, but honestly, it probably wasn't really needed since on its own the sausage is tasty!


This recipe is fairly easy and quick to make, while my water for the pasta was waiting to boil, I crumbled up my sausage in a skillet to cook and brown up.  

Once the sausage was brown I took it off the heat and set it aside as I cooked the pasta. 

Once the pasta was about a min from being done I took off the heat and drained it nearly completely and left maybe a 1/4 cup of pasta water in the pan with the pasta.

Next, I opened up all my cans, I drained and rinsed the beans and then dumped them in the pan with the pasta.

I then dumped the 2 cans of Fire Roasted Tomatoes with the juice

At this point, I added the 4 cups of Stock as well as the can of Vegetable Juice

After that, I just added my seasonings as well as the cooked and browned sausage.  Once I stirred it all together, I then let it simmer until hot and served with a nice piece of crusty bread and let me tell you I am not much for leftovers, but this was even better the next day!

BRUNCH WITH JENNIE-O

Today I am bringing you Brunch Cups/Egg Muffins. 



Brunch Cups/Egg Muffins are not only tasty but are great for family meals, get together and they’re a great way to use up produce in your refrigerator, plus they make your meal a bit more special! 

I’ve made many of these and have used all sorts vegetables, even leftover roasted vegetables, cheeses, meats, even meatless and they always turn out yummy! 


Plus, let’s be honest these are freaking cute!  Lol


Though these ones are not made with any kind of crust, I have made these with shredded Sweet Potato, shredded Potato, refrigerator Biscuit and Crescent Rolls.







The ingredients I used for these ones includes:

1 package of Jennie-O All Natural Turkey Sausage, that I browned before adding to egg mixture (please make sure you pre-cook prior to adding to mixture as this is not a fully cooked meat)

6 eggs (I used large organic free range, but I have also made with extra-large, even brown eggs, liquid egg whites and even egg substitute)

1/4 Cup of Milk, Half and Half, Rice Milk or for a different flavor Coconut Milk (which is really tasty if you add Sweet Potato and well-drained Pineapple)

1 Cup of grated Cheese, I used the 4 Cheese Italian Blend with Asiago, but I’ve also used Brie, Munster, Gouda as well as Vegan Parm (with the Vegan Parm I did add ¼ Tsp of Nutritional Yeast).

For seasonings, I used ¼ tsp of each: Pink Sea Salt, fresh Ground Pepper, Smoked Paprika, minced Garlic from a jar and dried Chives.

For vegetables, I used 1 lb. of cleaned Asparagus that I snapped into about 1-inch pieces, but I also added ¼ of dried Spinach too.

Other vegetables I’ve used in the past, Mushrooms, roasted Brussel Sprouts, Zucchini, Sundried Tomatoes, Butternut Squash, Broccoli, Cauliflower, Leeks (use your favorites)

First I pre-cooked and lightly browned my Jennie-O All Natural Turkey Sausage

While the sausage was cooking I pre-heated my oven to 350 F and beat eggs, added milk, seasonings, dried Spinach to eggs as well as about ¼ of the Cheese.

Now I am lucky to have a muffin pan that has worked great on its own, but some muffin pans require that you pre-treat the pan with a bit of Olive, Avocado or Coconut Oil or Baking Pan Spray

I’ve never made these with Muffin Cup Liners or Silicone Muffin Cup Liners, so I’m sorry I can’t say how well these would work.

Once the Turkey Sausage is all cooked, it was time to assemble!

Ok, first I add about 1 Tablespoon (could be a little less or more I honestly didn’t measure) of the Turkey Sausage to each of the Muffin Cups, then I sprinkled a bit of Cheese into each cup, then I added 2 pieces of Asparagus to each cup, then topped them to about half full with the Egg mixture and finished off each cup with 2 more pieces of Asparagus as well as sprinkled the remaining Cheese on each.

Once assembled I popped them in the pre-heated oven on the middle rack for 20-25 mins (I check at 20 mins and mine were lightly golden at about 23 mins, but ovens can vary)

I let ours cool for about 5 mins and they can be served on their own, with other Breakfast, Brunch, Lunch items or even on top of a salad!

Easy Summer Meals and Meal Ideas with Jennie-O

Hi Everyone, wow it's already July and the 4th is just around the corner, not only that it's BBQ time and did you know Jennie-O has a several great products that are great for those moments?

As a lot of you know I am a Jennie-0 Switch Circle Blogger as well as a long time Jennie-O customer, today I'm sharing a few of our favorite meals with Jennie-O, several of them are easy to make for large crowds as well as get togethers such as Summer BBQ's, hopefully you'll find something yummy to try.  

The latest product we've been enjoying lately are the Jennie-O 1/3 Lb. Seasoned Turkey Burgers 

Here is one of our latest meals with the Jennie-O 1/3 lb. Seasoned Turkey Burgers



My Jennie-O Hawaiian Inspired Burger:




As you can see this is a quick and easy meal and since the  the Jennie-O 1/3 lb. Seasoned Turkey Burgers are pre-seasoned  and just need to be cooked to proper temperature, this meal is all about your favorite toppings and tonight we went with a Hawaiian theme 
(wine totally optional and we chose a light fruity Pineapple wine to go with the theme, but if you do have an adult beverage, PLEASE be RESPONSIBLE!) 

Back to the burger, as the burger was cooking I simply added a but of Ground Ginger as well as a pinch of Smoked Paprika, because of the theme I was going for.

While the Burgers are Grilling, I prepped the lettuce, toasted the Hawaiian Buns and in a small microwaveable measuring cup I added our favorite Hoisin sauce along with about 1 tablespoon of the Pineapple juice from the can.

Once the burgers were ready I added or favorite Swiss Cheese, and let it melt, but this is also great with Havarti, Munster, Mozzarella and it's amazing with Blue Cheese as well.  Have fun with it and use your favorites

Once this was already it was time to assemble and enjoy with your favorite side, like grilled corn or salad like Hawaiian Mac Salad

Tonight's Jennie-O Turkey Stir Fry

Jennie-O Turkey Stir Fry:

1 Teaspoon of Coconut Oil, Avocado Oil or even Olive Oil to help brown the Turkey

1 Lb  Jennie-O Extra Lean Ground Turkey Breast





1 Lb Asparagus

1/2 Sweet potato (mine was larger sized so I only used half and put the other half in the fridge for another meal)

1/2 Teaspoon of Minced or Chopped Garlic (I used this as well as a few sprinkles of a granulated Garlic Powder)

1/4 Teaspoon of fresh ground Pepper

1/2 Teaspoon of Minced Ginger or Powdered Ginger

1 Teaspoon of Dried of Fresh Chives or even Scallions

1/4 Cup of Low or No Sodium Vegetable, Chicken Stock or Bone Broth

2 Tablespoons of Hoisin Sauce (I used Hoisin) or Teriyaki or even Oyster Sauce

1/4 Cup of Diced or Crushed Pineapple (I used Fresh, but canned would work too, for less sugar look for one in own Juice and not Syrup)

While my Jennie-O Extra Lean Ground Turkey Breast was browning, I washed and prepared our Vegetables, Garlic

Once the Turkey was nearly browned I added the minced Garlic as well as the Ginger

I then deglazed the pan with the ¼ Cup of Vegetable stock

Next, I added the Asparagus (If your Sweet Potato is in chunks I would also add now, but ours was thinly sliced, so I waited), let it cook for about 5 mins over Med-High heat.

After 5 mins I then added the Sweet Potato, the Chives as well as the rest of the seasonings and continued to cook for another 5 minutes as I wanted our Vegetables to still be a bit crunchy.

*Now this may vary a little depending on your stove, so once the Turkey is browned I would cook the Vegetables to desired doneness, then enjoy!

I used Organic Vegetables, Stock as well as Coconut Oil, but use what you have, use what you like!










I Served ours over Jasmine Rice, however, to make it even more healthy Brown Rice, Red Rice, Quinoa, Salad would be yummy as well. Plus, the addition of Carrots or other Vegetables would be great too and Stir Fry’s are a great way to clean out the Vegetable bin in your Refrigerator!








Stir Fry’s are also a great way to eat healthy as you can totally control what goes in it, plus they are quick and easy to make, plus are great year-round.

Sunday's Dinner: Turkey Chili Mac



By now you’re probably ready to pass out from all the food, shopping and traveling craziness that this season brings. Hopefully, you’ve made some amazing memories and shared traditions, with all the craziness of the past week, what’s for dinner or what do I make now with that leftover Turkey? is probably something that has crossed your mind a time or two.

I actually enjoy the leftover Turkey, it allows me to be creative as you can see from my ideas from the post:  Got Leftovers From Tonights Holiday Dinner?? Well, I have some Ideas For You!




One of the meals I like to make when I have leftover Turkey or just want an easy, yet hearty quick meal is my version of Turkey Chili as it can be made with shredded leftover Thanksgiving Turkey, chunked Turkey Tenderloin or as how I made this with ground Turkey. Now I am a Jennie-O Switch Circle Blogger so on this night I used Jennie-O Lean All Natural Turkey.


























Feel free to alter it to your own tastes or needs, but for this version, you’ll need the following:

1 lb. of pre-cooked ground Turkey (or shredded or chunked Turkey)
1/2 small red onion (you can sub for your favorite onion or omit), diced, chopped or grated
1 tablespoon of garlic
1 pound of pre-cooked macaroni or favorite pasta (a lot of boxed dry pasta is around 1 lb. and I use about 3/4-1 full box of it)
1 – 15 oz. can of kidney beans rinsed and drained
1 – 15 oz. can of black beans rinsed and drained
2 - 14.5 oz. cans of fire roasted tomatoes
1, 8-12 oz. bag of frozen corn
3 cups of Vegetable, Turkey or Chicken stock
1 ½ cups of water

Season to taste, I used fresh cracked pepper, pinch of salt, smoked paprika and a pinch of chipotle seasoning, but season as you like and to your tastes.


Optional toppers:

Sliced Avocado
Shredded Cheese
Sour Cream
Tortilla Chips
Sliced Green Onions
Sliced Pepperoncini or Jalapeno peppers

Since this calls for pre-pasta and pre-cooked meat you can just add to your large covered pot, I used a covered 5qt pot for mine, but feel free to adjust as needed if you decrease or increase the recipe.
Honestly, since the meat and pasta are pre-cooked, this is a bit of a dump, heat through and stir as needed kind of recipe. I cooked mine over Medium heat, but cooktops can vary a bit, so adjust as needed, but once it is simmering for 15 mins you should be good to go. If you like this more of a soup, vs a chili, just add water and stock until desired consistency and it’s great with a bit of lightly toasted bread or garlic bread as well.

Dinner tonight: Turkey Cutlets with Marinara and Angel Hair, Featuring Jennie-O Turkey Extra Lean Bonless, Turkey Tenderloins






Hi everyone,

As most of you know I am a Jennie-O Switch Blogger, I love their products and have been using them for years!  I love Jennie-O’s variety of products offered as well as the quality, for us they never disappoint and many are so versatile!  

Thursday’s dinner features:

 Jennie-O Extra Lean Boneless Turkey Breast Tenderloins  







I made Turkey Cutlets and served them over Angel Hair and Marinara, Yum!!  The cutlets were tender, juicy and married perfectly with the Angel Hair and Marinara!



Sorry I am not the best at writing out recipes, but here is how I did this:  Now everyone’s oven may vary but I know ours pretty well.  I pre-heated our oven to 375 degrees

I used a cookie sheet that I lined with a pre-cut Parchment Baking Sheet which I lightly oiled with Olive Oil, but I’ve also used Coconut Oil and Avocado Oil as well. 

I tend to make my own Marinara, but I also use a few brands of pre-made and if you don’t like Marinara this is also great with Alfredo or Sun Dried Tomato Alfredo sauce and you can use your favorite sauce as well. 

As for Pasta I used Angel Hair from my favorite brand, but I have also used Tortellini, Penne and Fusilli as well, so use what you have.

Now this is how I make always make my cutlets, Chicken or Turkey, for my version I used:

1 lg egg or extra-large egg with a splash of milk or water in it as well as 1 teaspoon of Spicy Brown Mustard, lightly beaten and mixed together.

I used about a cup of Italian bread crumbs, though I still season with freshly grated parmesan and Asiago cheeses, ¼ teaspoon dried Italian herbs, a pinch of salt, ¼ teaspoon of California Style Garlic Powder, 1 teaspoon of flour and then mix it all together.

I lightly pounded the tenderloins to make them all about the same thickness, so they would cook up at the same time. 






I than dipped the tenderloins in the egg wash, then the bread crumb mixture than placed them on my prepared cookie sheet.  Once I did the same with all of the pieces it was into the oven they went for 20-25 mins, I turned them over half way and once the time was up I check them with the meat thermometer and they were perfect!  While the Cutlets were cooking I cooked my pasta and I had already been cooking my sauce 



Some other ways I like to use the Jennie-O ; Jennie-O Extra Lean Boneless Turkey Breast Tenderloins  is after roasting it, slice the cutlets ups and serve over a slice of warm bread with a little gravy for open faced Turkey sandwiches or even Turkey Fajitas, Turkey Enchiladas, Turkey Scaloppini, Turkey Tetrazzini as these tenderloins are very versatile!
