Tonight's Jennie-O Turkey Stir Fry

Jennie-O Turkey Stir Fry:

1 Teaspoon of Coconut Oil, Avocado Oil or even Olive Oil to help brown the Turkey

1 Lb  Jennie-O Extra Lean Ground Turkey Breast





1 Lb Asparagus

1/2 Sweet potato (mine was larger sized so I only used half and put the other half in the fridge for another meal)

1/2 Teaspoon of Minced or Chopped Garlic (I used this as well as a few sprinkles of a granulated Garlic Powder)

1/4 Teaspoon of fresh ground Pepper

1/2 Teaspoon of Minced Ginger or Powdered Ginger

1 Teaspoon of Dried of Fresh Chives or even Scallions

1/4 Cup of Low or No Sodium Vegetable, Chicken Stock or Bone Broth

2 Tablespoons of Hoisin Sauce (I used Hoisin) or Teriyaki or even Oyster Sauce

1/4 Cup of Diced or Crushed Pineapple (I used Fresh, but canned would work too, for less sugar look for one in own Juice and not Syrup)

While my Jennie-O Extra Lean Ground Turkey Breast was browning, I washed and prepared our Vegetables, Garlic

Once the Turkey was nearly browned I added the minced Garlic as well as the Ginger

I then deglazed the pan with the ¼ Cup of Vegetable stock

Next, I added the Asparagus (If your Sweet Potato is in chunks I would also add now, but ours was thinly sliced, so I waited), let it cook for about 5 mins over Med-High heat.

After 5 mins I then added the Sweet Potato, the Chives as well as the rest of the seasonings and continued to cook for another 5 minutes as I wanted our Vegetables to still be a bit crunchy.

*Now this may vary a little depending on your stove, so once the Turkey is browned I would cook the Vegetables to desired doneness, then enjoy!

I used Organic Vegetables, Stock as well as Coconut Oil, but use what you have, use what you like!










I Served ours over Jasmine Rice, however, to make it even more healthy Brown Rice, Red Rice, Quinoa, Salad would be yummy as well. Plus, the addition of Carrots or other Vegetables would be great too and Stir Fry’s are a great way to clean out the Vegetable bin in your Refrigerator!








Stir Fry’s are also a great way to eat healthy as you can totally control what goes in it, plus they are quick and easy to make, plus are great year-round.

Breakfast, Doesn't Have To Be Boring with belvita

A couple of weeks ago, I did a review of belvita

belvita has been making morning meals easy  and how belvita helps me not have an excuse for the “no time for breakfast” morning and how I saved with ibotta at Walmart.


I really like the variety of flavors belvita has to offer, as there is something for everyone, plus they come in great on the go size packs too!


Plus, it's right on the packages of belVita breakfast biscuits their packages say by fitting belvita into a daily routine when combined as a balanced meal with fruit and dairy you can have up to 4 hours of sustainable energy!


So I just thought I would share another way I’ve found that we like to enjoy belvita, in a parfait and remind everyone that you can still save with Walmart and ibotta on belvita and if you already have a coupon from the newspaper that you can save even more with ibotta too!



This is how I did my belvita yogurt parfait.

In a parfait dish or a Mason style jar or dish of choice.


1) Crumble 1/2 a belvita Soft Baked Banana Bread Biscuit into the bottom of jar, dish or container

2) 1/2 Small Banana sliced

3) Add 2 tablespoons of Vanilla Greek Yogurt or favorite yogurt

4) About 1/4 cup of Strawberries or berries of choice


5) Top the berries with 4 oz. of Strawberry Greek Yogurt or Yogurt of choice

Finish off by crumbling the remaining half of the belvita Soft Baked Banana Bread Biscuit and enjoy!

Overnight Oats With PandaVita




As many of you know from an earlier review, I got the chance to try a product called PandaVita which is a brand that offers Baobab powder. In the next few days, I'll be doing another full review, where I'll share some more of my favorite ways to enjoy PandaVita But I wanted to take the time to share our yummy breakfast from this morning.

For this recipe, I used 2 pint sized Ball/Mason style jars to store the Overnight Oats in.

Cinnamon Spiced Apple Overnight Oats With PandaVita for the added Fiber and Fuel for our day.

In a large bowl, I mixed the following and stored them overnight in the refrigerator until breakfast.


1/2 cup of Milk, Almond Milk, Soy Milk or Coconut Milk

2 Teaspoons of PandaVita

1/2 Cup of Old Fashioned Oats

1/4 Cup of Yogurt (I used Vanilla Greek)

1 Teaspoon of Maple Syrup

1 Large chopped apple of choice

a few sprinkles of Cinnamon to taste


Mix well and put into 2 pint size covered containers and store overnight. Enjoy in the morning, you can add a bit of extra milk or if you want them warmed up warm until desired temperature in the microwave. Top with extra fruit or granola or even add favorite nut butter.

Starting The Year Off Right With Jennie-O



Hi Everyone! Thank you for stopping by and for your continued support. Hope 2017 is starting off great for you all.


As you all know I’m a Jennie-0 Switch Circle Blogger and throughout the year I’ll be sharing many great recipes featuring products. I’ve been a Jennie-O consumer long before I became a Jennie-O Switch Circle Blogger and we continue to enjoy their quality products year after year.


Below is my latest dish, now it was supposed to be a Lettuce Wrap Meal, however, the Commissary was out of so much because of weather many trucks haven’t made their deliveries so I got literally the last bag of pre-cut organic salad mix! Anyway, the meal was quite tasty, as well as filling and I hope you enjoy!



This Recipe features:
Jennie-O Extra Lean Ground Turkey Breast:





Ingredients:
1 teaspoon of Coconut Oil or Olive Oil to brown the Ground Turkey in
1 lb. Package of Jennie-O Extra Lean Ground Turkey Breast
1/2 – 1 lb. of fresh Asparagus, washed, trimmed and cut or snap into bite sizes
1 large cleaned Portabella Mushroom, trimmed and sliced
5 oz. can of sliced Bamboo Shoots, drained
1/4 cup of vegetable stock
1/4 cup of your favorite Hoisin Sauce
Pinch of Salt and Pepper
1 teaspoon of chopped or minced Garlic or about 2 cloves chopped or sliced


Now as you read above I had to use Pre-Cut Salad mix, but you could easily make Lettuce Wraps out of this or it would be tasty over Steamed Rice or Brown Rice, as well.
First, you want to heat your oil over med-low or med heat depending on your range, then add the Ground Turkey, cook until cooked through and lightly browned.


I prepped my Garlic, Asparagus as well as my Portabella Mushroom while my Jennie-O Extra Lean Ground Turkey Breast was browning.


Once the Turkey is cooked and browned, then add your Garlic, Asparagus, Mushroom as well as Bamboo Shoots.


I let the Turkey, Garlic, and Vegetables cook over medium heat for 5 mins. At this point I added the Vegetable Stock and Spices (Just not the Hoisin Sauce) I continued cooking for 7 minutes and then I added the Hoisin, I then covered the pan and continued to cook for 2 more minutes. Depending on how cooked you like your vegetables or how fast your food cooks up depending on your range it should be ready to serve, if not continue to cook your vegetables until desired doneness.




Like I mentioned and as shown in the pictured I served ours over pre-cut salad mix, but would be great as tasty, healthy, filling meal as a lettuce wrap, over Brown Rice, or even Low Fat or Low Carb Wrap or if you don’t mind the Carbs or Calories Steamed Rice.

Starting My Day Off with belvita and Saving as I do

I always knew breakfast was important, but I don’t think I knew it was that important. I know I am guilty way too many times of either skipping breakfast altogether or merely having a cup of Tea or Coffee.



I always had always found myself choosing sleep, commute time or even early start to the work day over breakfast, but with belvita I no longer have an excuse to skip breakfast, since I can take it easily on the go!



Though I do enjoy fruit and protein smoothies, I’ll be honest they take time and cleanup, I’m not much for protein bars as I haven’t found too many that I enjoy. So, when the opportunity to try belvita came along I and it being a New Year I wanted to give it a try.



What I’ve found is that with the great selection of breakfast biscuits, breakfast sandwich biscuits, their soft batch and their bits as well as so many varieties of flavors and being in easy grab and go packages I no longer found an excuse to miss breakfast, plus with the belvita bits make a great afternoon snack!







Though we’ve tried all the belvita products shown in the at home pics (not the Walmart in store pics) the Toasted Coconut Biscuits, the Strawberry Yogurt Sandwiches (hubby’s fav), the Dark Chocolate Cream Sandwiches (my favorite) as well as the Brown Sugar Cinnamon Bites have been our clear favorites.



A Walmart in our area not only has some great prices on belvita products, but they have a great selection as well. Each Walmart store may vary, but you can also save even more at Walmart on belvita with ibotta!

Happy 2017!

2016 Was a year of many more downs and losses than ups, plus it was a year that my knee, as well as back, plagued me, so though I am very thankful for every day and each breath, I am happy that 2017 is here.


I am not really one for making “New Year’s Resolutions” however, I plan on taking charge of my health and fitness this year like I always had except for the past 2 years. Between the downs, too few ups, the PCS’s and other challenges I shut down a bit and prior I had been a healthy, athletic person. Plus, I have a bad habit of putting myself last all the time and have for years.


Here are a few of my health and fitness goals moving forward:


Get more sleep and better quality sleep, I’ve had sleep issues since I was little, plus the fact that I am a light sleeper its bee hard to get back into a healthy sleep cycle.


Lose some weight


Tone Up


Go back to my morning fruit and protein smoothies and the occasional juice fasts. My body just feels great when I do this, plus I’ll be honest for the past 2 years I rarely eat breakfast and I know breakfast can make or break your day energy and focus wise.


Get back into overnight oats, I used to love them, I just got away from them during our last PCS


Green Tea Daily, though I love COFFEE! A cup of hot or iced Green Tea is refreshing and energizing to me.


More vegetables, grains and beans and not just on “Meatless Monday”, though I really do try and be good at this one, hubby is so not on board, so too often I just settle and have what I make him for dinner, but I can always make a batch of grains or beans ahead of time or just make and extra side of a different vegetable or roast more pans of vegetables.


Get back into practicing Yoga on a regular basis, I used to practice 5 days a week and honestly my old injuries hurt less when I did.


Taking some me time and have an at home spa day, this gal needs more bubble baths, face masks and piggy polish in her life! lol


Enjoy more time in the yard enjoy nature and not just to play with the dogs. We are lucky to live in a beautiful state and have greenbelt, so we always have picture worthy views, birds, butterflies, seasonal snow and more.


So, for me, 2017 will be back to being me again!
